A Comer (Take Two)

After my previous posting about how to make Congri, I was asked by someone what people in Cuba, and not Miami, actually ate today. Bueno, aside from comiendo cable, I thought I'd give a recipe for a dish that is eaten in la Havana today.

Conejo del Techo asado.

Garlic
Onion
Green Pepper
Oregano
Cumin
Salt
Conejo del Techo

Clean and trim el Conejo del Techo. Season it with the spices that you bought en el Mercardo Negro. Turn on the oven, or heat up your pressure cooker. Cook the meat until it is tender. Serve with left over rice and beans, and drink plenty of water.

Oh, and Conejo del Techo means Roof Rabbit, which is in reality a common house hold Rat. Yup, the despair for food in Cuba has gotten so great that people are even eating the Rats.
